Dum Aloo Made Simple
Dum Aloo is an Indian potato dish made with tender golden potatoes in a rich, flavorful curry. In this simplified JJ version, the potatoes are boiled and then deep-fried or air-fried before being added to a quick cashew-based curry.
The curry does not require a separately prepared onion-tomato masala or sautéing individual spices. JJ Magic Masala™ Signature, cashew paste, and water form the curry base, keeping the preparation simple while the potatoes remain the focus of the dish.

Ingredients
- 3 tbsp JJ Magic Masala™ Signature
- 1 tbsp ghee, butter, or oil
- 650–700 g small potatoes
- 25 g raw cashews + â…“ cup water, blended into a smooth paste
- 1 cup water
- ½ tsp salt, or to taste
Let’s Cook
1. Prepare the Potatoes
Boil the potatoes until tender and let cool. Deep-fry or air-fry until golden.
2. Make the Curry
Add water, cashew paste, and JJ Magic Masala™ Signature to a pan. Mix until smooth. Add the potatoes and gently coat with the curry. Cook on medium-low heat for 2–4 minutes.
3. Finish & Serve
Turn off the heat. Garnish with fresh coriander if desired. Serve hot with naan, roti, or rice.
