Ingredients
- 1½ tbsp JJ Signature Masala
- 1 tbsp cooking oil
- 80–100 g soya chunks
- ½ medium onion, chopped
- ½ green pepper, chopped
- 1 cup water
- Green onions, optional
- Fresh coriander, optional
How to Make Soya Chunk Masala
-
Prep the Soya Chunks
Soak the soya chunks in warm water for 5–7 minutes. Squeeze well and drain. For additional texture, lightly sauté the drained soya chunks in oil until slightly golden. This step is optional and can help reduce the raw soya aroma.
-
Add and Cook
Add 1 cup water, JJ Signature Masala, chopped onion, and green pepper to the pan. Mix well and cook for 4–5 minutes over medium-low heat. Add the prepared soya chunks and mix until the chunks are evenly coated with the masala.
-
Finish and Serve
Cook until the liquid has reduced and the soya chunks are lightly coated rather than surrounded by heavy gravy. Turn off the heat. Garnish with fresh coriander or green onions if desired. Serve hot with naan, roti, or rice.
Make It Your Way
Prefer a light gravy? Use approximately 2 cups of water and 2 tablespoons of JJ Signature Masala. Adjust salt or chili powder to taste and finish with a squeeze of fresh lemon if desired.
What Are Soya Chunks?
Soya chunks, also called soy chunks, meal maker, or textured soy protein, are a protein-rich plant-based ingredient made from soy. Once soaked, they absorb seasonings and sauces well, making them especially suitable for Indian masala dishes.
Why JJ Signature Masala Works in This Recipe
Soya chunks readily absorb flavor. JJ Signature Masala provides a balanced Indian spice blend in one step, eliminating the need to measure and balance several individual spices.
The same JJ Signature Masala can be used across everyday Indian dishes including vegetables, paneer, tofu, lentils, chicken, meat, and plant-based recipes such as this Soya Chunk Masala.
Optional Garnish
Fresh coriander and green onions both work well. Use either one, combine them, or skip the garnish entirely.
Wine Pairing
Dry Riesling pairs well with the warm spices, green pepper, and lightly coated soya chunks.
